Ingredients
  

For the Chicken:

  • 1 lb chicken breast (or chicken tenders)
  • 1 tablespoon maple syrup
  • ½ teaspoon paprika
  • ½ teaspoon coriander
  • ½ teaspoon black pepper
  • ½ teaspoon granulated garlic
  • ½ teaspoon cumin
  • ¼ teaspoon salt
  • 2 tablespoon olive oil
  • 2 tablespoon soy sauce
  • 1 tablespoon garlic puree
  • 1 tablespoon lemon juice

For the Wrap:

  • 4 large tortillas
  • cucumber (cut into strips)

  • tomato (cut into strips)
  • ¼ cup shredded cheddar (optional)
  • ½ cup salad mix

For the Sauce:

  • ½ cup sour cream
  • ½ cup mayonnaise
  • ½ teaspoon dried herbs

Instructions
 

  • In a bowl, combine all the chicken marinade ingredients. Add the chicken fillets or strips and toss to coat. For extra flavor, marinate for 30 minutes.
  • Preheat the air fryer to 360°F for 5 mins. Arrange the chicken in a single layer and cook for 12 to 15 minutes or until internal temperature reaches 165°F (74°C).
    Remember to flip halfway through to ensure even cooking.
  • While the chicken cooks, whisk the sauce ingredients together in a small bowl until smooth.
  • Remove the chicken from the air fryer and allow it to rest for a few minutes. Slice it into thin strips.
  • Spread a generous layer of sauce down the center (or slightly to one side) of each tortilla. Layer with cheese, chicken strips, lettuce, cucumber, and tomato. Add a little extra sauce on top.
  • Fold the sides of the tortilla over the filling and roll tightly to secure.
  • Heat a grill pan or electric grill and toast each shawarma for 3–4 minutes per side, pressing gently with a spatula to seal.
  • Serve warm, with extra sauce or cheese if desired.

Notes

  • Marinating tip: Even 15–30 minutes of marination adds a lot of flavor, but you can marinate overnight for deeper taste.
  • Air fryer alternative: Oven bake at 375°F for 25–30 minutes, flipping halfway through.
  • Cheese options: Mozzarella or Monterey Jack work well if you prefer milder cheese.
  • Wrapping tip: Don’t overfill, or the tortilla might tear while rolling.
