    Juicy chicken coated in a tangy, spicy Buffalo sauce is sandwiched between layers of melty cheese and tortillas until crispy on the outside with oozing deliciousness on the inside.

    Make the buffalo chicken filling: Mix shredded chicken, hot sauce, ranch dressing, spring onions, coriander, garlic powder, salt, and pepper.

    Heat skillet over medium heat to melt butter.

    Place tortilla in skillet, sprinkle with cheese, top with buffalo chicken filling and more some cheese. (Be careful not to over fill)

    Once the bottom of the tortilla is golden brown, fold in half and press lightly.

    When cheese melts, remove quesadilla and repeat process for the rest of the tortillas
